Club sandwich with hummus

planted.pulled Spicy Herbs

slices of bread of your choice (e.g. wholemeal rye bread)

handful of fresh mixed leaf lettuce (ruccola, batavia, spinach, cress, clover)

hummus (see preparation of hummus)

chickpeas, cooked
1 tbsp
tahini paste
1 tbsp
olive oil
2 tbsp
water

lemon, juice
1
pressed garlic clove
Salt & pepper & a little cumin
1
small bunch of chives

Preparation

  1. Place all the hummus ingredients except the chives in a blender jar.
  2. Blend for at least 1 minute to make a creamy hummus.
  3. Add a little more water (or oil) depending on the desired consistency.
  4. Wash and chop the chives. Add to the hummus and mix in by hand.
  5. Heat a frying pan with a little oil and fry the planted.pulled spicy herbs on medium heat. Reduce the heat after 5-6 minutes.
  6. Toast the bread slices. Spread 1 tbsp of the hummus on each side of the bread slices.
  7. Then place one slice of bread on a plate and top with lettuce and planted.pulled spicy herbs. Place the second slice of bread on top. If necessary, use a toothpick to secure it.
