Kardashian Chicken Salad

Ingredients

cup shredded white cabbage

spring onion, finely chopped

large carrot grated

handful chopped coriander

diced avocado

cup cooked planted.chicken (shredded)

peanuts, roughly chopped, for garnish
Dressing

tablespoon sesame oil

teaspoon soy sauce

tablespoon rice vinegar
1/2
tbsp maple syrup
1/2
tablespoon sesame seeds
2
cm fresh ginger, peeled and finely grated

Preparation

  1. Cook the planted.chicken according to the instructions on the packet, chop and leave to cool.
  2. In a large bowl, mix the remaining salad ingredients and toss through.
  3. In a small bowl, combine all the ingredients for the salad dressing and whisk together.
  4. Add the shredded chicken and mix the salad with the dressing or leave the dressing in the separate bowl.
  5. Sprinkle with chopped peanuts.
