glass of vegetable stock

olives
250 g
cherry tomato
20 g
desalted cappers
2 tbs
olive oil
15 g
toasted pinenuts
Fresh rosemary
Fresh thyme
T.t black pepper

Preparation

  1. Cut the cherry tomato in half, set a side.
  2. In a pot heat up some olive oil with a clove of garlic, gently roast.
  3. Add the cappers and the olives.
  4. Add a teaspoon of tomato concentrate, cook for 1 min and then add the wine. Allow the alcohol to evaporate and then deglaze a second time with half a glass of vegetable stock add the tomato.
  5. Add the herbs, reduce the heat, cover with a lid and gently cook for 25 min
  6. Heat up a pan with some vegetable oil to medium-high heat.
  7. Cook the fillets for 2-3 min per side, remove from the pan and cut into 6 large chuncks.
  8. Add the cutted fillet to the sauce, gently mix. Season with salt, pepper and a bit of lemon zest accordingly to your taste preferences.
