planted.chicken Filet Mediterranean with roasted veggies

Cherry tomato
Black olives

Agretti
Fresh basil
Oregano

olive oil

1 tsp
black pepper

Preparation

  1. Cut the bellpepper and the zucchini evenly.
  2. Peel the onion and cut into thick julienne.
  3. Half the cherry tomato.
  4. Wash the agretti, gently pat dry and remove the woody stems.
  5. Mix all the veggies in a bowl, add a crushed garlic clove, some olive oil, salt, pepper, oregano and some fresh basil.
  6. Gently mix the vegetables to evenly distribute the seasoning. Allow them to marinate for 30 min.
  7. In the meantime preheat the oven or your grill at 200°C.
  8. Transfer the veggies from the bowl to an oven tray with baking paper and gently evenly spread them.
  9. Cook the vegetables for ca. 20min or until lightly caramelized.
  10. Heat up a pan (or a BBQ) to medium high heat. Drizzle some olive oil on the planted.chicken filet, season with a sprinkle of salt. Cook for ca. 3 min each side till nicely caramelized.
  11. Roughly chop some fresh basil and further season the veggies with it.
  12. Serve together hot as a main dish.
