Worceistershire sauce

Lemonjuice

Dijon mustard
1/6 tsp
tomato puree
2 tsp
chopped parsley
1 tsp
chopped thyme
1 tsp
chopped tarragon
1/2 tsp
salt
1/4 tsp
paprika powder
1/5 tsp
curry powder
1/4
lemonzest

Preparation

  1. Temperate the butter so that it is smooth.
  2. Weigh all ingredients.
  3. Quickly saute the shallot brunoise in a bit vegetable oil.
  4. Temperate the steaks, remove it from the packaging, pat dry to remove excess moisture and bring it up to room temperature.
Café de Paris
  1. Quickly saute the shallot in vegetable oil.
  2. Mix all ingredients with the butter until it is smooth. Use a whisk or a small blender.
  3. Portion the butter in small drops with a teaspoon or roll it in foil to cut it in pieces later on.
  4. Let it rest in the fridge.
  5. Take it out of the fridge before serving that it is not hard when serving.
Steak
  1. Season the steak generously with salt and pepper.
  2. Heat up the pan and add a bit of vegetable oil.
  3. Pan fry the steak until golden brown for around 3 – 4 minutes on each side.-
  4. Add a little bit of vegan butter, thyme, rosemary and a crushed garlic and finish the steak in the butter.
  5. Take it out of the pan and let it rest for a few minutes before serving.
Serve
  1. Place the café de paris on top of the steak and let it melt. Enjoy.
  2. This composition works well with all kind of sides.
